On Tuesday, the first lobsters for the season were served outside Bovallstrand on the west coast of Sweden.
The Swedish chef Paul Svensson, who has a genuine interest of sustainability, with crew, served an exclusive group of 12 people different dishes with lobster as main ingredient. The guests were Stefan Edman, environmental specialist, Johan Trouvé, CEO at West Sweden Chamber of Commerce, a team from american National Geographic, Karin Nordström from Hellolittlefuture, Alexandra Zazzi, swedish chef among others.
The theme of the lunch was to discuss a more sustainable Western Sea.
